Last week we celebrated Taylor's 29th birthday.
Here he is with his little girls.
I made an "Ashley Creaton" birthday cake for him. Those are usually scary but, this cake/ brownie turned out amazing.
I combined 2 receipes to make it.
The first receipe was Pioneer Woman's Knock You Naked Brownies and the second recipe I used was Paula Deen's Cheesecake Filling. They are actually made with German Chocolate Cake, which is why I originally used the Pioneer Womna's receipe. I'm a terrible wife and got home last Monday night and realized my wonderful-husband-that-I-do-not-deserve birthday was the following day. German chocolate cake mix was all that we had in the pantry.
So, here's my receipe:
Chocolate Cake Batter
1 box (18.5 Ounce) German Chocolate Cake Mix (I Used Duncan Hines)
1/3 cup Skim Milk
1/2 evaporated milk (additional)
1/2 cup Coconut Butter
1/3 Semi-Sweet Chocolate Chips
For the filling
2 (8 oz) packages of neufchatel cream cheese
3 eggs
1/2 cup sugar
1/2 sour cream
Preheat oven to 350 degrees.
In a large bowl, mix together cake mix, 1/3 cup skim milk, and melted coconut butter. Stir together until totally combined. Mixture will be very thick.
Press half the mixture into a well-greased 9 x 9 inch square baking pan. Bake for 8 to 10 minutes. Remove pan from oven and set aside.
In large bowl, beat neufchatel cream cheese at medium speed with an electric mixer until creamy. Add sugar, beating until smooth. Add eggs, 1 at a time, beating well after each addition. Stir in sour cream. Pour batter into prepared pan. Bake 45 minutes then turn the oven off and leave the cheesecake in oven with door closed for another hour. Let the cheesecake cool completely in its pan on a wire rack then cover and chill for 4 hours.
Place cheesecake filling between 2 layers of brownie mix. Bake for 20 to 25 minutes. Remove from pan and allow to cool to room temperature, then cover and refrigerate for several hours.
Definately worth a repeat even though it was the most time consuming dish I have ever made! He's worth it. ;)
